ΟΡΓΑΝΩΣΗ ΚΑΙ ΔΙΟΙΚΗΣΗ ΕΠΙΧΕΙΡΗΣΕΩΝ ΤΡΟΦΙΜΩΝ [open]

The main purpose for the existence of the food companies (as autonomous economic units) is the effective satisfaction of the modern human needs. Such effective satisfaction of human needs can’t be materialized without the effective organization and the management of the referred companies: The objective of this course is to introduce to the students the basics, and the main rules which are directing the external and the internal environment in which the companies are operating daily. The food companies constitute a specific sector, subdivision of the overall business environment and therefore are directed by the same rules, and regulations which are opposed to all companies regardless sector of activity. The students are acquainted first with the internal structures of the companies and the good management practices required for better operation and growth, and second with the effects the environment is introducing to the companies’ operation. Furthermore the students are introduced to the terms of effective management with emphasis to the programming, organization, direction, auditing, and decision processing. Without covering each one of the above subjects related to business management in depth, the students in the current course are assisted to gain an overall, and comprehensive view at the introductory level, and to understand terminology and subjects which they will need later on in the following years of education, and the rest of their professional career, especially since there is good chance they will be occupied in the Greek food business sector (25% of the Greek overall business sector).

Οι μαθησιακοί στόχοι του μαθήματος είναι: 1.  Η κατανόηση του ορισμού, της δομής της επιχειρήσης, και του σκοπού ύπαρξης της 2.  Η κατανόησης της λειτουργίας της διοίκησης (management) στις επιχειρήσεις και της σημασίας αυτής 3.  Η κατανόηση της επιμέρους λειτουργίας του προγραμαμτισμού στην διοίκησης 4.  Η κατανόησης της επιμέρους λειτουργίας της οργάνώσης στην διοίκηση 5.  Η κατανόηση της επιμέρους λειτουργίας της λειτουργίας στην διοίκηση 6.  Η κατανόηση της λειτουργίας του ελέγχου στην διοίκηση 7.  Η κατανόηση της ορθής λήψης αποφάσεων στην διοίκηση 8.  Η έκμάθηση της ιστορικής διαδρομής ανάπτυξης της επιστήμης της διοίκησης των ειχειρήσεων

Prerequisites

Προαπαιτούμενο για την παρακολούθηση τπυ μαθήματος είναι η παρακολούθηση και επιτυχής εξέταση του μαθήματος ΕΙΣΑΓΩΓΗ ΣΤΗΝ ΒΙΟΜΗΧΑΝΙΑ ΤΡΟΦΙΜΩΝ Ι (που απαρτίζεται από δύο τμήματα: α) τις Διαλέξεις ΕΠΙΣΤΗΜΗΣ ΤΡΟΦΙΜΩΝ & ΔΙΑΤΡΟΦΗΣ από εισηγητές εκτός πανεπιστημίου, και β) τις επισκέψεις σε τοπικές παραγωγικές επιχειρήσεις τροφίμων και την μελέτη λειτουργίας αυτών. με το εν λόγω προαπαιτούμενο μάθημα οι φοιτητές έχουν πάρει με πρακτικό τρόπο βασικές γνώσεις για την λειτουργία και την ανάπτυξη των επιχειρήσεων πριν την επιστημονική μελέτη της διοίκησης στο παρόν μάθημα.
